• One pound peeled and deveined shrimp
  • One box or one bag zucchini noodles
  • One cup cherry (halved) or diced tomatoes,
  • 1 tablespoon avocado oil
  • 1 tablespoon low sodium cajun seasoning
  • 2 tablespoons zero calorie balsamic vinegar


  1. Sprinkle cajun seasoning on shrimp, saute’ in avocado oil.
  2. Remove from pan.
  3. Saute’ zuchini noodles and tomatoes until wilted.
  4. Add shrimp back to pan.
  5. Add balsamic vinegar toss, sauté two minutes.
