Chocolate Power Bites

Recipe from The Plant Pure Nation Cookbook by Kim Campbell

These are no-bake cookies that I refer to as “bites” because I make them small. They are naturally sweet from the dates and loaded with chocolate and walnuts. They taste like you’re eating a candy bar without all the butter, sugar, and artificial flavors.

Ingredients

• 1 cup walnuts

• 1 cup pitted Medjool dates

• ¼ cup unsweetened cocoa powder

• 1 teaspoon vanilla or coconut extract

• ¼ cup unsweetened coconut flakes, for garnish

Directions

 Line a 9 × 9 inch pan with parchment paper.

 Place the ingredients except coconut flakes into a food processor and blend until a thick dough forms. You may need to add a small amount of water here if the consistency is too dry.

 Press the chocolate mixture into the prepared pan.

 Refrigerate for 1 hour.

 Cut into 24 bites and serve. Garnish the tops of the bites with coconut flakes.
