Turkey & Kale Breakfast Muffins

Directions

  1. Begin by sautéing the ground turkey in a pan over medium heat until it’s cooked through. Make sure to break it up into small crumbles as it cooks.

  2. Add the chopped onion and kale to the pan with the turkey. Continue cooking until the onion becomes translucent and the kale is tender. Remove from heat and allow the mixture to cool slightly.

  3. While the turkey and kale mixture is cooling, take a large bowl and whisk the eggs until they are well beaten. Add 1/4 cup of water to the bowl and continue whisking until the mixture becomes frothy.

  4. Now, it’s time to combine the cooked turkey and kale with the beaten eggs. Mix them together thoroughly to ensure an even distribution of ingredients.

  5. Fold in the grated cheese into the mixture. The cheese will add a creamy and flavorful element to the muffins.

  6. Season the mixture with salt and white pepper according to your taste preferences. Remember to go easy on the salt if your cheese is already salty.

  7. Preheat your oven to 350°F (175°C). Prepare a muffin tin by either spraying it with cooking spray or using muffin cups to prevent sticking.

  8. Spoon the turkey, kale, and egg mixture into the prepared muffin tin, filling each cup about three-quarters full. This will allow room for the muffins to rise while baking.
